Title: Fresh Mint Chutney

Yield: 1 Cup
2 lg Shallots; coarsely chopped
1 sm Fresh hot green chile;
- seeded, coarsely chopped
1 ts Natural sugar
1/4 ts Salt
2 c Fresh mint; tightly packed
1/4 c Water; or more as needed
1 tb Fresh lemon juice
Place the shallots, chile, sugar, and salt in a food processor and
process until minced. Add the mint, water, and lemon juice and
process until smooth, adding more water if a thinner consistency is
desired.
Transfer to a small bowl, cover, and refrigerate for 30 minutes.
Taste and adjust the seasonings before serving. Although this chutney
will keep in the refrigerator fr a day or so, I like to serve it
shortly after making it, when the bright green color of the mint is
at its best.
