MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Chicken Bulgur Skillet

     Yield: 4 Servings

     1 lb Chicken; boned, skinned,
          - in 1" cubes
     2 ts Olive oil
     2 md Carrots; chopped
   2/3 c  Onion; chopped
     3 tb Walnuts; chopped
   1/2 ts Caraway seeds
   1/4 ts Ground cumin
 1 1/2 c  Bulgur
     2 c  Chicken broth
     2 tb Raisins
   1/4 ts Salt
   1/8 ts Ground cinnamon

 In a large cast-iron or other heavy skillet, cook chicken in oil
 over medium-high heat until meat is no longer pink. Remove and keep
 warm. In the same skillet, cook and stir the carrots, onion, nuts,
 caraway seeds, and cumin until onion starts to brown, 3 to
 4 minutes.

 Stir in bulgur. Gradually add broth; bring to a boil over medium
 heat. Reduce heat; add the raisins, salt, cinnamon, and chicken.
 Cover and simmer until bulgur is tender, 12 to 15 minutes.
