MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Vegan Collard Greens

     Yield: 6 Servings

     1 tb Olive oil
     1 md Onion; chopped
     2 cl Garlic; minced
     4 c  Vegetable broth
     2 c  Water
     1 ts Salt
   1/2 ts Paprika
   1/4 ts Crushed red pepper flakes
     1 lb Collard greens
     1 tb Cider vinegar
     1 ds Hot pepper sauce

 In a large Dutch oven, heat oil over medium heat. Cook onion until
 tender, 4 to 5 minutes. Add garlic, cook 1 minute longer. Add
 vegetable broth and water; bring to a boil. Add salt, paprika, and
 crushed pepper flakes; stir to combine. Reduce heat to medium.

 Wash collards thoroughly. Remove thick stems. Stack and roll up
 collards, slice into 1/2" thick strips. Add to Dutch oven; simmer
 until tender, 45 to 60 minutes longer, stirring occasionally. Add
 cider vinegar and hot sauce before serving.
