Persimmon Pudding

2 tablespoons butter
1 cup sugar
2 cups sifted flour
1/2 teaspoon cinnamon
2 teaspoons baking soda
1 cup mashed persimmons
1/2 cup milk
1 teaspoon vanilla
1/2 cup raisins
1/2 cup chopped nuts
1/2 cup dates
1/4 cup citron, chopped fine -- optional

Preheat oven to 350F.
Grease/oil a 1 1/2 covered casserole dish.

Cream butter and sugar.
Add all the dry ingredients.
Fold in persimmons.
Mix in milk and vanilla.
Stir in fruits and nuts.

Pour into casserole and cover.
Place in shallow pan of water.
Bake 1 1/2 hours at 350F.  Or until set and knife comes out clean.
