But the best thing someone cooked me was a beet salad. Just sliced/cut/chopped/whatever, beets. They come in a box in the produce section, already cooked, no muss no fuss. My friend mixed those with an orange and some raspberry vinaigrette. It was incredible!

Since then, I have made it with apples and celery. Oranges, yellow and orange peppers and once with mango, orange and yellow peppers and chickpeas. Always with raspberry vinaigrette.

The biggest thing I’ve noticed during my recovery from surgery; I’m not the same. I think I’ve changed. I don’t step, I don’t walk, I don’t dance, I just — float.
