Title: Cabbage, Miso, And Salmon Soup
Categories: Soups
     Yield: 1 Gallon

2 qt Water; up to 3 qt
   1/2    Green cabbage; chopped 1"
     2    Sweet onions; diced
    15 oz Canned salmon
     8    Thyme sprigs
     4 oz Red miso
     2 tb Vietnamese mushroom powder
   1/4 c  Oil; +1/4 c; divided

Heat water and put in crockpot. Dissolve miso paste and Vietnamese
mushroom powder into hot water. Turn crockpot onto HIGH to start
 warming it up.

Core and half cabbage. Refrigerate unused half of cabbage. Chop other
half into 1" squares. Sauté with 1/4 c oil in frying pan on
medium-high heat until about 1/4 of the cabbage is browned. Add into
 crockpot.

Peel and dice onions. Sauté with 1/4 c oil in a frying pan until
translucent and beginning to brown. Add into crockpot.

Pinch top of thyme sprig between thumb and forefinger. Pull backwards
through pressed fingers to strip the leaves and tender tips off the
tough stems. Repeat with remaining thyme sprigs. Compost stems. Mince
thyme leaves and tips. Add into crockpot.

Open canned salmon. Drain liquid into crockpot. Coarsely mash salmon
into smaller chunks and add into crockpot.

Turn crockpot onto LOW and simmer for a couple of hours, or as
 desired, to blend flavors together.
